This weekend I am heading up to the gorge in Washington for Sasquatch Music Festival. Excited is an understatement. The event is 3 days long with 5 stages in the venue playing all kinds of great music including, Outkast, Foster the People, MIA, Demetri Martin, Kid Cudi, Queens of the Stone Age, and so many more. Everyone camps together in a large field behind the venue. A friend from home, who now lives in Vancouver, BC is driving down to meet up with us. It will be a perfect get-away weekend.
Since there are three of us going, we are each planning one dinner to share with everyone. Cody and I bought an adorable little BBQ (yes, BBQs can be adorable) for this trip and so we would have one at our apartment so naturally our meals will be BBQ’d. But I am also making this Quinoa Chickpea Veggie Salad because it has become one of my all time favorite recipes. I wanted to share it with you because you are all going to love it as much as I do. It makes quite a bit of food that can be a main dish or a side salad. And it can be served hot or cold. It’s an all around win.
